Fall has officially arrived, the air has changed, the leaves are turning into beautiful shades of yellow, red and orange creating the most picturesque nature scenes here in New England.  I feel truly blessed to be here and enjoy each of the season’s amazing gifts.   Fall is by far my favorite season in many ways.  In the physical world my appetite gets quite a boost and just like that my passion for food gets enhanced by the aromas and flavors of caramel, pumpkins, apples, cinnamon, nutmeg among others, while in the spiritual realm our souls are usually more vulnerable to the changes which is usually a good time for me to sort things out, get rid of toxic habits, thoughts and relationships and create a basic picture of what I want to attract in the near future.  Getting rid of mental clutter is just as important as cleaning your (living) space.

I can’t ignore the fact that fall comes fast and always get’s me by surprise.  Just last week I was making my Roasted Tomatoes Sauce recipe fresh from my garden and it felt as if summer was fully here and although I am still picking beautiful large juicy tomatoes, the easy-breezy summer days are long gone.  But that’s okay…!

Last week my and my family went apple picking, like we always do, sadly with less and less enthusiasm from the kids who are growing far to fast, but thankfully enough interest to make to one more year… or hopefully two!  Going apple picking to me is really just another great excuse to be close to nature and enjoy the joyful fruits of it.  But I do love the whole experience, the cool fresh air, the fascinating colors of the pumpkins, the red apples and delicious smell of fresh baked donuts, hmmm… have I convinced you to go apple picking yet?

So every year we do this and we end up with a ton of apples, and some will go bad after a while, I give some out to families and co-workers, but I can tell you this year things will be little different as I have so many recipes to use them and let me tell you I am not wasting any time.

Here is my first apple recipe of the year…

When you are on a healthy eating path, sometimes you just have to reinvent your snacks.  These baked cinnamon apple chips for instance are crunchy, sweet, tasty and absolutely addicting. It’s the perfect health snack to keep you fit while enjoying the best flavors of the season.  What’s not to love!  I literally made two batches in one day and next day they were gone!  Thankfully I have plenty more apples to turn into healthy chips, these are a great snack to pack in your kids lunchbox or munches on the go.

Cinnamon Apple Chips

Prep: 15 minutes
Cook: 2 hours
Total: 2 hours 15 minutes
Servings: 3 bowls

Ingredients 

  • 6 macintosh apples
  • 1 tbsp cinnamon
  • 1/4 c brown sugar

Instructions 

  • Wash and peel the apples.
  • Slice them as thinly as you can. The thinner and crunchier.
  • Spread the thinly sliced apple on a baking sheet over parchment paper.
  • Sprinkle the apples wight he sugar and cinnamon mix
  • Bake at 250F for 1 hour
  • Turn the apple slices and sprinkle more sugar cinnamon (to taste)
  • Bake for another hour.
  • Remove and let it cool off before storing.
