This is a really exciting time of year for me, and I feel that I can confidently say the same for most parents, but for the sake or argument I will speak for myself.   The school year is coming to an end in a little less than two weeks and that is something I am really looking forward to.  My week days and nights have been cramped with end of year activities, field trips, sports, band concerts, birthday parties and other activities in addition to (clearing throat) my own life and work schedule, leaving little room to keep calm and breath.  I am surprised I am keeping my cool :), I guess that light at the end of the tunnel can give a sense of hope and direction to those in need.

I am sure almost everyone, parents and no parents are for the most part occupied, which is why easy and quick recipes like this 25-minutes baked cod are so convenient and the best part is, because this dish doesn’t require any work once I put it in the oven, I can steam or sauté some vegetables, set the table and even get ready for my next assignment, all while the fish is baking.

My goal and general rule is to get the kids out of the house fed and feeling refreshed for their next adventure.  Often times they will come home tired and with a load of homework due the next day.  I find that by giving them a nourishing meal, with lots of greens and a good source of protein and carbs, sort of gives them a second wind to go on to their sports activities.

A lot of us only start thinking about fish around this time, but this truly is an all-year-round dish.  Fish is a great option that I like to serve at least a couple times a week, especially since I am not a huge fan of red meat.  This helps me balance out our options and therefore take advantage of the nutritional values that each option has to offer.

For this recipe I am using crushed crackers instead of bread crumbs.  In case you don’t have bread crumbs in your pantry and have never baked fish with dry salted crackers, give it a try because I really think you will like it.

Lemon Capers Baked Cod

Ingredients 

  • 2 cod filets
  • 1 tbsp coconut oil
  • 1/2 cup classic salted crackers
  • 1 tbsp capers
  • 1 lemon 1/2 juiced, 1/2 sliced
  • salt & pepper to taste
  • cilantro garnishing
  • pink berry pepper or red pepper flakes optional

Instructions 

  • Pre-heat oven to 400F degrees.
  • Brush coconut oil on to the fish. Sprinkle with salt and pepper.
  • Cover the fish evenly with crushed crackers (to crush crackers put them in a zipped sandwich bag and crush it with the back of a large metal spoon or ice cream scooper).
  • Squeeze the juice from a half lemon over the fish. Cut other half of the lemon and place lemon slices on the fish for moisture and enhanced flavor.
  • Spread the capers over and around the fish.
  • Bake for 20 minutes or until the crackers start to turn golden brown.
  • Garnish with fresh cilantro and serve over a bed of rice or vegetables
