Are you a Breakfast person? Like the kind who goes to bed dreaming of waking up to a delicious breakfast ? You know that famous quote by >the one and only< Julia Child; “People who love to eat are always the best people” ? I super agree with Julia, however I will refine the grains by affirming that breakfast people are even nicer!

No, seriously… I have’n met one dark soul that cheers for a warming breakfast. Those two definitely don’t go together! What I am saying is that, if you meet someone who looooooves breakfast as much as you do, STICK WITH HIM(her), as there is a 99% chance that things will go really well… blame the baker if it doesn’t whoooaa 🙂

Until then, you can stick with me! I am nice. Kind. Funny at times (although my kinds never laugh at my jokes, what-is-it-with-them??!!), and I can bake! well, except last week’s batch of apple cider donuts which went straight to my parents chickens… and I am pretty sure I heard my Mother say that the chickens looked at it and walked away. Awk… sassy little feathers!

However, when things go right, they look pretty darn good. Wouldn’t you say? Prosciutto may not always make things look at it’s best (I blame it to two failed attempts of photographing a fig and prosciutto pizza!) but I batcha’ it’ll always taste good.

Not to defeat my every-day Farmer’s Market Countryside Breakfast, which by the way is really awesome… but this prosciutto egg boat, might be a up a notch. Either way, I will let you decide for yourself. One thing is for certain, you >>breakfast lover<<can always count on me to find the most delicious ideas to satisfy your morning tiger-like hunger!  hint-hint… plan the night before. Prosciutto Egg Boat

Prosciutto Egg Boat; a crunchy prosciutto shell softened by a warm and cheesy egg in the center!
Prep: 5 minutes
Cook: 15 minutes
Total: 20 minutes
Servings: 6 servings

Ingredients 

  • 1/2 lb prosciutto thick cut
  • 8 eggs
  • 1/2 cup milk
  • 1 cup shredded cheese
  • 2 tbsp fresh scallion chopped
  • salt and pepper to taste

Instructions 

  • Pre-heat oven to 350F degrees. Prepare a muffin pan by spraying or brushing oil
  • In a small bowl beat the eggs with a fork, add milk cheese, scallion and salt and pepper. Mix to combine and set aside.
  • Arrange two crossed slices (like an "x") of prosciutto in each muffin cup. Pour enough egg batter to fill the muffin cup.
  • Bake for 15-17 minutes or until the egg is cooked through.
  • Remove from oven and serve. Can be refrigerated for up to 3 days.
