Wow, what a great week of fun! I hope you all got to do something you enjoyed and spent some time outdoors. I had a crazy busy and super awesome weekend and did lots of fun things. But I confess I missed spending time in my kitchen, all the cooking I usually do on weekends and staying in touch with you all … oh well! I am trying to practice “living the moment”, let go of all stress and attachments and simply enjoy what I am doing, even if I wished, or planned, or needed to be doing something else. This relates to some changes I have been making to be as stress free as possible, enjoy the precious moment (the gift of the present which is all we have) and release better energy into the world as well, but I believe I have mentioned this before and I don’t mean to side track here so I will move right on to this week’s awesome recipe that I have been so in love with. Why? just take one look at this fantastic, colorful and nutritious breakfast bowl!
Let me start off by telling you all folks how much I have been enjoying Siggi’s yogurt, all flavors but specially coconut. It tastes more tart then other yogurts due to the making process and no added sweetener (only natural sugars from the real fruit, yes they use real fruits!) and although it is not certified organic Siggi’s only use milk from grass-fed cows and farms that do not use any kind of growth hormones. You can also be certain that there won’t be any artificial ingredients, sweetener or colorings.
Basically I am always looking for ways to improve my meals to more nutritious foods, specially in the morning. I made this coconut chia pudding the night before and the next morning I covered it with my favorite fruits. It’s really simple and easy way to add this kind of nutrition to your day. The yogurt itself has about 13g of protein while chia seeds contains high quality protein, almost all the carbs in them are fiber and lots of omega-3 fatty acids (healthy fats!), proving with a great combination of vital nutrients to start your day right. The way I look at food is as fuel to my body. My body awakens in the morning and it’s not going to run well on empty. Bad foods are simply going to mess with my natural system and give me too much energy at once and then none to a point where I will be falling apart half way through my day. The right foods will feed my body well, giving me just the right amount of energy that will continue to release throughout the day in a steady pace. Foods that are high in nutrients will not only help me feel well but will also support my whole system to a future of great health.
It is a big misconception that eating healthy requires lots of time that we most working adults don’t have. That’s totally wrong! It’s all about a little bit of planning and a deep desire to feel better, be healthy and therefore happy.
I hope this easy breakfast bowl will inspire you to desire (and achieve) this healthy state of body and mind for your self and your family. It’s an absolutely beautiful bowl of satisfying food and fresh berries smells the best. Please take advantage of this abundant season, it’s a great time to buy and stock up on seasonal fruits and veggies and most of them will freeze well.

Coconut Chia Pudding Breakfast Bowl
- 1 cup Siggi's coconut yogurt
- 2 tbs chia seeds
- 1 tsp honey
- 1/4 cup goji berry
- 1/4 cup granola
- Add the chia seeds into the yogurt cup and let this sit overnight in the fridge.
- The next morning pour the coconut chia pudding into a large bowl and drizzle with honey.
- Add granola, fruits and goji berry and serve.
