I must start this post with an apology to those of you who asked for this recipe several times… Please forgive me! I usually have (if I am lucky) a few recipes lined up to be published and although it takes some work to get them ready to be posted, on Instagram I am likely to post up to the minute stuff, which a lot of times includes the recipes that I am currently working on but may not be published for a couple weeks. But here it is, as delicious as it appears to be, my homemade coconut and strawberry creamsicles.
These popsicles looks delicious and they taste amazing. I am sure I don’t need to convince you of that! Two deliciously flavored popsicles perfect to cool off summer’s heat and stay fit while enjoying the best summer flavors.
Making your own popsicles at home can be a smart choice in many ways. For me being able to use of all my left over juices, smoothies and fruits that are overriding to make delicious popsicles, is one of the greatest benefits but having children I find this to be an opportunity for a fun cooking experience too. It’s also nice to know what’s in my popsicle and stay away from the artificial colors, flavors and ingredients that are found in most popsicles sold in stores worldwide. Popsicles are a fun, hassle free and quick way to make delicious desserts or even a healthy cooling snack to eat between your meals.
For the record, in case you haven’t noticed Coconut is my very favorite flavor. Growing up in Brazil coconuts are such an abundant fruit so we get to eat and drink a lot of it. Although I can almost alway turn down an ice cream, I rarely can if it’s coconut flavored. Nowadays it’s really easy to find coconut derived ingredients, I think it’s largely due to the fact that people are realizing the amazing benefits that this fruit (or nut) has to offer.

- Coconut Creamsicles
- 1 cup (5.3oz) Siggi's coconut yogurt
- 1 pk unsweetened creamed coconut
- ¾ cup coconut milk
- 2 tbs maple syrup
- Strawberry Creamsicles
- 1 cup (5.3oz) Siggi's strawberry yogurt
- 1 cup frozen strawberries
- ¾ almond milk
- 2 tbs maple syrup
- Combine the ingredients for each flavor in a blender and pulse for about a minute.
- Pour the creamy mixture into the popsicle molds.
- Freeze for at least 3 hours before serving.
- Enjoy as a delicious dessert or cooling snack.
