Fall Harvest Pasta Salad

Fall Harvest Pasta Salad; a tasty combination of the best fall flavors in one plate!
  • 1 lb vegetable pasta, leafy shaped like this one here
  • 1 tbsp olive oil
  • ¼ cup sunflower seeds
  • ½ cup dried cranberries
  • ½ cup pecan, halves
  • 1 granny smith apple, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or agave (vegan option)
  • ½ tsp poppy seed
  1. Cook pasta according to package instruction (about 7 minutes). Let it cool off
  2. Add the pasta ingredients in a big bowl and mix.
  3. In a mixing cup add the ingredients for the dressing and mix until well combined.
  4. Pour the dressing over the pasta and give it a little toss.
  5. Serve immediately or store in the refrigerated for up to 4 days.
