Maple Soy Cranberry Salmon; dinner has never tasted better with this easy, quick and flavorful Salmon dish!
  • 2 Salmon fillet
  • 1 cup fresh cranberries
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp soy (reduced sodium)
  • 1 tsp dijon mustard
  • 1 tsp chilli pepper
  • 1 pinch fresh black pepper
  1. Preheat the oven to 400F degrees. Place a sheet of parchment paper on a baking sheet.
  2. In a small glass bowl whisk the sauce ingredients to combine.
  3. Pour over the Salmon fillets equally. Add the fresh cranberries.
  4. Bake for 20 minutes then broil for up to 5 minutes or until golden brown.
