Sweet Potato Shrimp Skillet

  • 1 large sweet potato, cubed
  • 1 tbsp olive oil
  • brussels sprouts, halves
  • mushrooms, sliced
  • 10-12 large shrimp, peeled
  • ½ cup vegetable broth
  • ½ cup shredded mozzarella cheese
  • ½ tsp red pepper flakes
  • 1 tsp thyme
  • 1 tsp oregano
  • salt + pepper, to taste
  • fresh cilantro, garnish
  1. Pre-heat oven to 350F degrees.
  2. Heat oil in a oven safe skillet or cast iron. Add the sweet potatoes and sauté on medium low for about 10 minutes. Just enough to lightly soften and give the sweet potato a head start. Remove from heat.
  3. Add in the remaining ingredients including spices and bake for about 25 mins. Remove from oven and sprinkle with mozzarella cheese. Bake for an additional 3-5 minutes, just enough to melt the cheese. Garnish with fresh cilantro (or herb of preference) and serve.
