Bacon & Cheese Breakfast Cauliflower Tots

  • 1 large cauliflower head
  • 6 slices bacon, chopped into ½ inch pieces
  • 2 tbsp scallion, chopped
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup Italian style bread crumbs
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • 1 whole egg + 1 egg white
  • salt + pepper to taste
  1. Steam cauliflower for 10-12 minutes. Once cooked set aside to completely cool off to reduce moisture.
  2. Pile all the slices of bacon on top of each other to make it easy to cut them into ½ inch pieces. Transfer the bacon pieces to a hot skillet and cook until browned (about 10 minutes)
  3. When cauliflower is cooled, add it to the food processor and work it until the cauliflower turns into grain-like texture.
  4. Transfer the cauliflower to a large glass bowl. Add remaining ingredients and fold until uniform.
  5. Scoop up about ½ tbsp of the cauliflower mix into your hands to form into tots. Add each cauliflower tots about 1 inch apart on a greased baking sheet. You will probably need two medium size baking sheet, or one large and one small. This recipe makes about 40 Cauliflower tots.
  6. Bake at 375F degrees for 15 minutes then turn them and bake for an additional 12-15 minutes.
  7. Serve hot/ warm with catchup or hot sauce.
