Honey Cantaloupe Jam

Serves: ½ cup jam
  • RITZ Crackers
  • ½ cup ricotta cheese
  • 2 cups cantaloupe, chunks
  • ¼ cup raw honey
  • 1 lemon, juiced
  • sea salt
  • fresh dill
  1. In a small saucepan cook the cantaloupe for 5 mins. Mash lightly with a potato masher and add in the fresh lemon juice, honey and sea salt. Boil, stirring occasionally for 7-8 mins to thicken the jam.
  2. Remove from heat and pass the excess liquids through a mesh strainer without pressing down the jam.
  3. Let cool completely then transfer to a glass jar.
Assembling The RITZ Crackers Snacks
  1. Spread a thin layer of ricotta cheese on a single cracker. Top with honey cantaloupe jam and garnish with fresh dill for a complete and tasty snack.
