Cannellini Sausage Kale Soup

Hearty and healthy 30-minute Cannellini Sausage Kale Soup with carrots and celery in a deliciously warming broth.
  • 1 can 15oz cannelloni beans
  • 2 cups kale, roughly chopped
  • 1 cup carrots, sliced
  • ½ cup celery, sliced
  • 12oz (4) fully cooked chicken sausage, chunks
  • 5 cups vegetable broth
  • 1 tbsp olive oil
  • 1 small shallot, sliced
  • 4 garlic cloves, minced
  • 1 tbsp tomato paste
  • ½ tsp sea salt
  • ½ tsp paprika
  • ½ tsp thyme
  1. Heat oil in a large pot or dutch oven.
  2. Add in sliced shallot and sauté until translucent (2 mins).
  3. Add minced garlic and sauté until fragrant (2 mins).
  4. Add sausage, carrots, celery and spices (salt, paprika, thyme), sauté stirring often for 5 mins.
  5. Add broth and tomato paste. Cover and let it simmer for 10 minutes.
  6. Add kale and cannellini beans, turn heat down to low, cover and let it simmer for an additional 5-6 mins.
  7. Serve hot with a baguette or crackers.
