Chocolate Almond Energy Balls

  • 1 ripe banana
  • ½ cup organic soft dried apricots
  • 1 cup homemade chunky almond butter
  • ½ cup organic old fashioned oats
  • 1 tbs shredded coconut
  • 2 tbs Spectrum chia & flax seed blend with coconut & cocoa
  • 0.5 lb Valrhona Manjari Cocoa 64% cocoa bittersweet chocolate
  1. Add all the ingredients except chocolate to a high speed blender (I use Ninja Professional).
  2. Blend well for about 10 minutes, stopping a few times to bring the ingredients together.
  3. Place this mixture in a plate and roll into small balls, on the palm of your hands.
  4. Refrigerate for at least ½ hour before coating with chocolate.
  5. Melt the chocolate in the microwave and pour it into a small bowl.
  6. Using two spoons, one on each hand, dip and roll the energy balls into the chocolate.
  7. Place the chocolate dipped energy balls on a tray with parchment paper.
  8. Refrigerate for at least 1 hour before serving. Keep refrigerated
