Fall is (basically) here, and I truly hope this excites you. This is a glorious time to enjoy the outdoors, hiking, walking, biking… the cool air and beautiful landscape create a warming invitation to embark in yet another exciting adventure.

Around this time of year, you will start to see fresh okra beautifully displayed on the shelves of many grocery stores. It’s a short season but with a little bit of creativity, we okra lovers get to expend it for a little while longer.

Okay, I get it… You are either not familiar with this exotic vegetable or have tried and, hmm… didn’t quite like it, am I right? It may some take time for you to acquire the taste for okra but I promise you the health benefits are well worth your efforts.

Growing up in Brazil (hey, did I say this before? hahaha), we ate okra all the time. Sautéed, fried, added to beans… I mean, c’mon, what don’t we add to beans? But my favorite way to eat okra is lightly cooked with a touch of olive oil and salt and pepper. Simple and irresistible! So tasty I would want to eat it for breakfast. So I did just that. Now that the kids are in school, breakfast (round 2) is a whole ball game 🙂

So, if you are looking to add a nice chunk of nutrition to your morning meal, this is perfect.  Low calorie, lots of fiber and nutrients in this healthy plate. Plus, you will finally learn how to make okra your next best friend and if you get to the point you love it so much, and want to scoop up every okra from the store, please know okra freezes REALLY WELL, no room for waste here!

Farmer’s Market Countryside Breakfast

Farmer’s Market Countryside Breakfast; tasty, low calorie healthy meal.

Cook: 15 minutes
Total: 20 minutes
Servings: 1 -2 servings

Ingredients 

  • 2 cups okra sliced
  • 2 eggs
  • 1/2 cup water
  • 1/4 red onion thinly sliced
  • 1/2 tbsp butter
  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • salt and pepper

Instructions 

  • Wash the okra, cut both ends off and slice into thin rounds
  • Heat the water in a small frying pan and add the okra, onion, oil, salt and pepper to taste. Let it cook for 10 mins
  • Add the butter and cherry tomatoes, cook for 3 minutes
  • Add the eggs, lower the temp to medium low and cook for about 2-3 minutes or until the eggs are done
