This recipe was absolutely fun to make, but it really was a development from playing around with a pizza dough, which I have been making quite a bit lately. I am always trying to come up with a mid afternoon snack/ meal for the kids, they come from camp in absolute state of starvation one wouldn’t want to stand on their way!
As I said before, I was playing around with a pizza dough and feeling a bit discontent with having to make another pizza when the inspiration came, to wrap the dough as if hugging the cheese and pepperoni. My second thought was… wait, this has it’s own name… STROMBOLI !!! (excitement!)
The descriptive picture above should cover much of the steps but here is a quick how-to-make review:
1 – 16oz bag pizza dough (frozen)
1 small bag pepperoni (aprox. 30 slices)
1/2 cup shredded mozzarella cheese
6 slices American cheese
Olive oil enough to brush on the dough
Prepare the dough as directed in the package (let it sit out of fridge until dough is soft and at room temperature), roll the dough into a rectangular shape. In the middle of the dough only sprinkle the shredded cheese. Place the slices of American cheese on top of shredded cheese, alongside as pictured above. Cover all the cheeses with the pepperoni slices. With a sharp knife or pizza roller cut strips of the dough leaving it still attached to the it. Fold the two ends first and than work through the rest in a zig zag motion, one strip over the other (kind like working with shoe laces). Ones the dough is wrapped brush olive oil gently on top of the loaf and sprinkle Italian seasoning to taste. Bake at 400F for about 20 minutes or until the dough is light brown.
