I hope February was good to you and brought you a lot of joy. I certainly can’t complain for the weather here in New England has been rather mild and pleasant. Additionally, my family and I experienced an amazing vacation in sunny Florida including a few days in Disney World. I am so thankful for the time spent together bonding, connecting and having a blast.
I think it is safe to say that most-kids dream of going to Disney World at one point or another. So growing up in a rural village in Brazil, this dream felt far beyond reach to say the least.
Walking on Disney grounds felt surreal and I couldn’t help but to let the child in me come out and play. There was so much joy and excitement on everyone’s faces. I believe that every place has it’s own energy and so Disney certainly has an unique vibe to it that you simply can’t get anywhere else.
Aw yes, my kids had fun too 🙂
Recipe Inspiration
I am excited to share this week’s recipe and what has inspired me to create this colorful salad.
Clearly the beautiful colors, animation and creativity of Disney World, particularly Epcot and it’s numerous flower fields has deeply inspired me to make this week’s recipe. I wanted to be able to bring all the fun and colors from the Epcot parks into a beautiful and inviting plate. This was a fun way for me combine two of my favorite passions; food and travel.
When it comes to salads I like to follow two rules; it can’t be plain or drenched in dressing. (See my delicious Kale Salad with Creamy Dressing here). The fact that one feel the need to overdo on the dressing to bring some taste to the plate is a big no-no for me. Plus I am a mindful eater and I take pride and enjoy what’s on my plate. If it’s not that attractive, in one way or another, I am likely to reject.
This delicious Rainbow Salad can be served two ways; steamed or raw. The recipe you see here is raw but you can easily bring it to a steamer for 3-5 minutes, just to warm up the veggies, as some prefer and may better benefit from eating warm foods, depending on your body type (take the quiz to find out here)
One thing is for sure, this rainbow salad has amazing flavors and an excellent array of nutrition. The olive oil dressing just brings everything nicely together without over saturating this dish. This colorful rainbow salad will brighten the table and bring joy to everyone who eats.
Cooking with pride and joy can have an extremely positive affect on your health. Take time to observe the texture of your meals, smell the flavors and close your eyes while you take the first few bites. Bless your food for it shall nourish your body, give your energy and strength to live a happy life. Don’t take your meals for granted or the time you spend enjoy it. Put distractions away whenever you can to enjoy the food that’s nourishing your body and perhaps connect with he people you are sharing it with.
Rainbow Salad
Ingredients
- 1 medium beet root peeled
- 1 medium sweet potato peeled
- 1 medium zucchini peeled
- 1/2 cup blueberries
- 1/4 cup cauliflower florets
- fresh basil
- Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup coconut vinegar
- salt and pepper to taste
Instructions
- Using a Spirilizer, twirl the zucchini, sweet potato and beet into thin spaghetti like noodles
- Arrange the noodles into a big bowl or platter
- Add the blueberries and sprinkle with cauliflower florets (or feta cheese, if an option)
- Garnish with dressing and serve
- Note: .There is a variable for this recipe, if warm foods is your preference. Simply steam the beet, sweet potato, zucchini and cauliflower florets for 3-5 minutes. After removing it from the steamer add the blueberries and dressing.
