Fall is famous for it’s tasty treats, even my guts knows that. There are no parents that can resist, no grandparents that will assist – a trick without a treat! I confess, this season brings out the best in me, perhaps a bit ‘child like’ but who is watching hahaha… Maybe it is because I didn’t grow up in this culture, and now I am trying to catch up 😉 well, let just go with that.

Seriously, no one can resist the smell of fresh baked cinnamon donuts, or caramel apples, how about pumpkin latte or salted caramel pecan popcorn ?! All of those yummy things are just impossible to turn down, especially this time of year.

Yesterday, while baking another delicious batch of salted caramel pecan popcorn the kids came in from school. They started shouting from the garage -“what’s cooking”? “whatever it is, I want it”. It’s truly the BEST feeling in the world and let me tell you, getting through with the photos was not exactly a cup of tea… Those little hands were all over my popcorn bucket, deforming the beautiful shape I had worked hard to mount 🙂 They are just too cute to get upset, plus who can blame them for not resisting this yummy treat!

When making this recipe, I wanted to use a quality butter. To me, there is nothing worse than flavoring food with low quality butter and I can always tell the difference. Funny thing is, because I grew up in a small farm town in Brazil I became familiarized at young age with farm quality products, especially dairy products, so I know exactly what a good quality butter should taste like. For this recipe I chose the Cultured Pasture Artisan-Crafted Butter, which is lightly salted, creamy, naturally golden colored from summer grasses, not from artificial dyes and is free of synthetic additives, toxic pesticides or GMO. This particular butter is made at the peak of pasture season, when the cows’ milk is naturally higher in omega-3s and CLA.  A good quality caramel sauce is also highly recommended.

Salted Caramel Pecan Popcorn

Cook: 30 minutes
Total: 40 minutes
Servings: 6 cups

Ingredients 

Instructions 

  • Pre-heat oven to 300F degrees. Place a layer of parchment paper on a medium size cookie sheet. Set aside.
  • Make the popcorn according to package directions. If you make you own popcorn, do not add salt or butter but I find that microwave popcorn works just fine. Pour popped popcorn on to the cookie tray and add the pecans.
  • Melt the butter in the microwave for 20 seconds. Stir to smooth out. Pour over the popcorn and pecan mix, evenly. Do the same with the caramel. Sprinkle with sea salt.
  • Bake for 15 minutes, stop to mix (this is important, otherwise the popcorn will be unevenly coated. Bake for another 15 minutes. Remove from oven and let it cool off for 5 minutes before serving.
