As the days gets hotter ice cream becomes a must have food and although I am not a huge fan I like to always have some to serve along with desserts and to cool off my often overheated kids.
Since me and my love prefer sugar free foods (added sugar as opposed to foods naturally sweet) I decided to make this special recipe, which is a healthier alternative to regular ice cream. This recipe is dairy free and sugar free and made with few ingredients.

1lb Frozen Strawberries
1 cup almond milk (coconut milk works too!)
1/2 cup pistachios
2 tbs 100% pure maple syrup (optional)
Mix all ingredients in a high speed blender. If you wish to have a little added sweetener I suggest you use the maple syrup (100% pure). Blend it for about 2-3 minutes. Freeze it for at least 2 hours before you serve it.
This recipe is serves well along with desserts. Most of my guests loved the hint of pistachio even those who aren’t particularly fond of this nut.
