Pulse it until mixture is creamy and smooth.

Pour cottage cheese protein smoothie into popsicle mold. Insert popsicle sticks and place it in the freezer for at least 4-6 hours.

Melt chocolate chips and coconut oil in the microwave. Transfer melted chocolate to a small Ziplock bag. Make a small cut in the Ziplock bag to drizzle chocolate over the popsicles.

Remove protein popsicles from popsicle mold. Drizzle with chocolate and add crushed pistachios over the melted chocolate. Serve immediately.
