What to do when you get hooked on to something juicy, and by that I mean green juices, and cannot stop writing posts and recipes about it ? All my creativity is coming out in liquid form, help please! So after brainstorming I decided to make an attempt with cookies, of course!
Valentines day is just around the corner and what better way to celebrate it then by making some delicious healthy cookies, because we label readers eat cookies too. I decorated my cookies accordingly but you can always opt out of sprinkles or have fun with it.
If cookies sounds good, tell me there is coconut in it and you don’t need to say no more! I am the biggest fan of all coconut foods (thinking of Pineapple, Blueberry, Coconut Popsicles right now… hmm!) I use coconut EVERYTHING from oil, flour, sugar, coconut spray, coconut water, milk and so on… So I try to incorporate coconut into as many recipes as I can.

For this recipe I am trying something new. I just received my first bag of Organic Coconut Flour and I cannot wait to have some fun with it! Although it’s texture is very similar to wheat flour, coconut flour is completely gluten free and high in fiber and protein! with that said I am planning on adding some to my next smoothie (see, thinking juicy again!) I also used Organic Coconut Palm Sugar as that’s the only sweetener I will ever use in my baking. And as a final touch I added some unsweetened Organic Coconut Flakes. There is plenty of coconut products to make this cookie a little nutty!
