Pre-heat oven to 375F degrees. Spray two large cookie sheets with coconut oil and set aside.

In a large bowl combine the butter, peanut butter, coconut sugar, egg and vanilla extract. Whisk vigorously until the mixture is smooth
Pour half of the flour into the peanut butter bowl and fold. Add remaining flour and chocolate chips, fold until uniform but don’t overwork it.
Scoop a small amount of the chocolate chip peanut butter dough to form into a round shape and start adding it to the cookie sheet, leaving enough room for the cookie dough balls to melt into a cookie shape. Proceed until all the dough has been used.
Bake at 375F degrees, top rack of the oven for about 8-9 minutes. Remove from oven, sprinkle cookies with sea salt flakes. Allow the cookies to cool off completely before storing
