Ingredients

  • 1 3/4 cup whole wheat flour
  • 1 tbsp ground flaxseed
  • 1/2 tsp each, sea salt, cinnamon and baking soda
  • 1/4 tsp each, ground ginger and allspice
  • 3 large eggs
  • 1/3 cup olive oil
  • 1/2 cup maple syrup
  • 1 tsp orange zest + 3 tbsp fresh orange juice
  • 1 tsp vanilla extract
  • 3/4 cup unsweetened pumpkin puree
  • 1 cup walnuts, divided

Instructions

  • Pre-heat oven to 350F degrees. Line a 9 x 5 loaf pan with parchment paper
  • In a medium bowl add in the wheat flour, flaxseed, salt, cinnamon, baking soda, ginger and allspice. Whisk to combine
  • In a large bowl whisk together the eggs, oil and maple syrup until well combined. Stir in orange zest, orange juice, vanilla extract and pumpkin puree. 
  • Pour flour mix into the wet ingredients and stir until no white streaks remain. Fold in 1/2 cup of walnuts
  • Pour batter into the loaf pan. Bake for 50-55 minutes or until toothpick/ fork comes out clean when inserted into the center. 
  • Remove from Oven. Top with remaining walnuts (optional). Allow bread to cool down before cutting into slices
