- 8 soft tortillas
- 1 1/2 lb sirloin steak
- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 tsp cumin
- 1 onion diced
Mango Jalapeno Salsa
- 1 cup mango cubed
- 2 small jalapeño seeded and chopped
- fresh cilantro
- 1 lime wedges
Cut and Season the steak
Slice steak thinly against the grain. Pat the sirloin steak dry, then season generously with salt, pepper, and cumin on both sides. Sauté the onion
Heat olive oil in a large skillet over medium heat. Add sliced/diced onion and cook for about 4 minutes, stirring occasionally, until softened and lightly golden. Cook the steak
Increase heat to medium-high. Add the seasoned steak to the skillet with the onions and sear until browned and cooked to your liking (timing depends on thickness and cut). About 8-12 minutes. Make the mango jalapeño salsa
In a bowl, combine diced mango, finely chopped jalapeño, diced onion, chopped cilantro, and fresh lime juice. Season lightly with salt and stir. Taste and adjust lime/heat as desired. Warm the tortillas
Warm tortillas in a dry skillet for 20–30 seconds per side, or wrap in foil and warm briefly in the oven. Assemble the tacos
Add sliced steak and sautéed onions to tortillas. Spoon over the mango salsa. Finish with extra cilantro and lime wedges if you’d like.
Storage & Reheating
-
Steak & onions: Store cooked steak and onions together in an airtight container in the refrigerator for up to 3–4 days.
-
Mango jalapeño salsa: Store separately in a sealed container for up to 2 days. (The mango will release juices over time, so it’s best fresh.)
-
Tortillas: Keep tortillas sealed at room temperature or refrigerate according to package instructions.
👉🏻 Tip: Storing the steak, salsa, and tortillas separately helps everything keep its best texture and flavor.
How to Reheat
-
Stovetop (best option):
Warm steak and onions in a skillet over medium heat with a splash of water or olive oil, just until heated through. Avoid overcooking to keep the steak tender.
-
Microwave:
Reheat steak in short intervals (20–30 seconds), covered, until warm. This works well for quick lunches.
-
Tortillas:
Warm in a dry skillet for 20–30 seconds per side or wrap in a damp paper towel and microwave briefly.
The mango jalapeño salsa is best served cold or at room temperature no reheating needed.
Make-Ahead Tip
These tacos are great for meal prep: cook the steak and onions ahead of time, then make the salsa fresh or the morning you plan to serve. Assemble just before eating for the best flavor and texture.
