Ingredients
3 salmon fillets
6slicesprosciutto
1tbspolive oil
1tbspmaple syrup
salt and pepperto taste
fresh dill
Instructions
Slice salmon in half lengthwise. *A narrow piece of salmon will hold up the prosciutto slices a lot better*. Brush salmon with maple syrup and season with salt and pepper.
Wrap salmon tightly with prosciutto slices. Use toothpick to hold prosciutto as needed.
Heat oil in a cast iron skillet. Place salmon in the skillet and sauté for about 2-3 minutes each side until the prosciutto is lightly toasted. Remove from heat and brush the prosciutto wrapped salmon with maple syrup once again.
Transfer skillet with salmon to the oven. Bake at 425F degrees for 10-12 minutes. Option to broil for 2-3 minutes to toast up the prosciutto.
When done transfer salmon to serving platter and garnish with fresh dill and lemon slices.
Notes
If you end up with leftover salmon and prosciutto, store them in an airtight container in the fridge for up to 2 days. Reheat the leftovers in the microwave or in a 275ºF oven for 10 to 15 minutes to revive the crispy prosciutto.
