- 2 cups okra sliced
- 2 eggs
- 1/2 cup water
- 1/4 red onion thinly sliced
- 1/2 tbsp butter
- 1 cup cherry tomatoes
- 1 tsp olive oil
- salt and pepper
Wash the okra, cut both ends off and slice into thin rounds
Heat the water in a small frying pan and add the okra, onion, oil, salt and pepper to taste. Let it cook for 10 mins
Add the butter and cherry tomatoes, cook for 3 minutes
Add the eggs, lower the temp to medium low and cook for about 2-3 minutes or until the eggs are done
