Healthy Baked Cinnamon Apples

Ingredients

  • 6 apples (see varieties recommended in notes)
  • 1 lemon juiced
  • 2 tbsp unsalted butter cubed
  • 1/3 cup coconut sugar
  • 1/2 tbsp cinnamon
  • 3 thin slices fresh ginger
  • 4 cloves
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 pinch sea salt
  • fresh thyme
  • dairy-free ice vanilla cream

Instructions

  • Peel, core and slice apples and transfer to a baking dish
  • Add lemon juice, coconut sugar, cinnamon, ginger slices, cloves, maple syrup and vanilla extract and mix well to combine.
  • Top apple mixture with cubed butter and add a pinch of sea salt.
  • Bake at 375F degrees for 40 minutes or until apples are golden brown and bubbly.
  • Remove from oven and let it stand for 5 minutes. Serve with ice cream and fresh thyme.
