Fried Yuca and Kielbasa (Yuca Frita)

- 4 cups cooked/ boiled yuca
- 12 oz beef kielbasa
- 6 tbsp butter
- 1/2 onion sliced
- 2 tbsp grated parmesan cheese
Slice the kielbasa on an angle. Set aside
Melt butter in a cast iron skillet. Add in onion slices and cooked/ boiled yucca. Sauté until golden brown (about 10 minutes). Transfer to a plate
Toss in kielbasa and fry on both sides until heated through (about 3-4 minutes each side).
Return yuca to the skillet. Sprinkle with parmesan cheese.
Broil for 3 minutes on high, until cheese has melted and yuca has golden edges.
Serve with fresh herbs and more parmesan cheese.
