Fried Yuca and Kielbasa (Yuca Frita)

Ingredients

  • 4 cups cooked/ boiled yuca
  • 12 oz beef kielbasa
  • 6 tbsp butter
  • 1/2 onion sliced
  • 2 tbsp grated parmesan cheese

Instructions

  • Slice the kielbasa on an angle. Set aside
  • Melt butter in a cast iron skillet. Add in onion slices and cooked/ boiled yucca. Sauté until golden brown (about 10 minutes). Transfer to a plate
  • Toss in kielbasa and fry on both sides until heated through (about 3-4 minutes each side).
  • Return yuca to the skillet. Sprinkle with parmesan cheese.
  • Broil for 3 minutes on high, until cheese has melted and yuca has golden edges.
  • Serve with fresh herbs and more parmesan cheese.
