Ingredients

  • 10 oz cottage cheese
  • 1 cup strawberries reserve 2 tbsp
  • 8 graham crackers reserve 2 crackers
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  • Add cottage cheese, strawberry, honey, vanilla extract and crumbled graham crackers to a food processor.
  • Pulse until the ingredients have incorporated. Do not over process, the goal here is to leave some chunks of strawberries and cracker pieces for texture.
  • Transfer cottage cheese strawberry mix into the silicone cubes.
  • Top cottage cheese mix with small chunks of fresh strawberry and crumbled graham crackers. Then insert lollipop or popsicle stick. Because this is a thick mixture the sticks should be able to stay put.
  • Transfer to the freezer for at least 2-3 hours before serving.
