- 4 salmon filets cubed
- 2 cups broccoli florets
- 1 whole red bell pepper chopped
- 1 whole red onion, chopped
- 1 yellow squash cubed
Honey Mustard Glaze
- 1/3 cup olive oil
- 2 tbsp honey
- 1 tbsp dijon mustard
- 3 cloves garlic
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp old bay seasoning
- salt and pepper to taste
In a bowl mix the honey mustard glaze ingredients and whisk well to combine. Set aside
Prep all the veggies and arrange in a baking sheet (see notes).
Pour the honey glaze over the veggies and salmon then toss to combine. You can use a kitchen tong but I prefer to use my hands to coat everything generously.
Bake at 400F degrees for about 20 minutes.
Remove from oven and garnish with fresh dill and a drizzle of lemon over the salmon.
👉🏻 Be sure to grab a baking sheet that is large enough to hold everything without much overlapping so the veggies and salmon cook thoroughly.
