Pumpkin Tres Leches Rice Pudding
A creamy fall twist on Brazilian arroz doce, this Pumpkin Tres Leches Rice Pudding combines long-grain white rice, pumpkin puree, three kinds of milk, cinnamon and cloves for a warmly spiced stovetop dessert.

- 2 cups long-grain white rice
- 4 cups water
- 2 cinnamon sticks
- 10 whole cloves
- 1 14oz can sweetened condensed milk
- 1 12oz can evaporated milk
- 1 15oz can pumpkin puree
- 4 cups milk
- 1/2 tbsp pumpkin pie spice
- 1/2 tbsp ground cinnamon
- 1 tsp ground cloves
Add the rice, water, cinnamon sticks and whole cloves to a large, heavy-bottomed pot. Cook for about 15 minutes, or until most of the water has been absorbed but the rice is not completely dry.
Meanwhile, combine the sweetened condensed milk, evaporated milk, pumpkin puree and milk in a large bowl. Stir until smooth and well combined.
Pour the pumpkin milk mixture into the partially cooked rice. Add the pumpkin pie spice, ground cinnamon and ground cloves and stir well.
Reduce the heat to low and simmer for approximately 20 minutes, stirring occasionally and then more frequently as the mixture begins to thicken.
Remove from the heat when the rice is completely tender and the pudding is thick and creamy but still slightly loose. It will continue to thicken considerably as it cools.
Remove the cinnamon sticks and whole cloves before serving. Serve warm, at room temperature or chilled, with additional cinnamon or pumpkin spice if desired.
Make Ahead and Storage
This is a great dessert to prepare ahead of time, particularly if you're serving it for a fall gathering or Thanksgiving.
Let the pudding cool before transferring it to an airtight container and refrigerating it. As it chills, expect it to continue thickening.
If you're serving it cold, stir it well before portioning it into bowls and add a little milk if necessary.
I would refrigerate leftovers promptly and use them within 3 to 4 days.
