  • 3/4 cup almond flour
  • 1 tsp baking soda
  • 2 pk Vital Proteins Collagen Peptides*
  • 6 tbsp unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1/2 cup coconut sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 2/3 cup dark chocolate chips
  • 1 pinch sea salt flakes

  • Pre-heat oven to 375F degrees. Spray two large cookie sheets with coconut oil and set aside.
  • In a medium bowl add almond flour, baking soda and Vital Proteins Collagen Peptides. Whisk to combine
  • In a large bowl combine the butter, peanut butter, coconut sugar, egg and vanilla extract. Whisk vigorously until the mixture is smooth
  • Pour half of the flour into the peanut butter bowl and fold. Add remaining flour and chocolate chips, fold until uniform but don’t overwork it.
  • Scoop a small amount of the chocolate chip peanut butter dough to form into a round shape and start adding it to the cookie sheet, leaving enough room for the cookie dough balls to melt into a cookie shape. Proceed until all the dough has been used.
  • Bake at 375F degrees, top rack of the oven for about 8-9 minutes. Remove from oven, sprinkle cookies with sea salt flakes. Allow the cookies to cool off completely before storing
