Ingredients

  • 1 cup old-fashioned oatmeal
  • 1 banana
  • 1/4 cup maple syrup
  • 5 oz plain or strawberry yogurt or apple sauce
  • 1/2 cup strawberries

Instructions

  • Pre-heat oven to 350F degrees. Spray a muffin pan with cooking spray and set aside.
  • Add all the ingredients to the blender cup and work it for about 1 minute* on low going up to low-medium speed. Stop right away when the ingredients are fully combined. The goal is to keep the shape of the oats as much as possible.
  • Pour batter into a muffin pan, no muffin liners needed! Bake for 17-18 minutes or until toothpick come out clean.
  • Top with fresh berries, confectioning sugar and serve.
  • Keep remaining muffins refrigerated for up to 3 days.

Notes

Don’t overwork the batter, you should still be able to keep the shape of the oats. I used a Vitamix which only took 1 minute. Other machines may take longer.
