Strawberry Avocado Spinach Salad with Shrimp

Ingredients

Shrimp

  • 10 large shrimp
  • 1 tsp olive oil
  • 1/2 tsp paprika
  • 1/2 lemon juiced
  • salt and pepper

Dressing

  • 1 cup fresh strawberries
  • 3 tbsp maple
  • 1 tbsp apple cider vinegar
  • 1 tsp chia seeds
  • pinch of salt

Salad

  • 3 cups baby spinach
  • 1 cup strawberries halved
  • 1/2 cup red onion chopped
  • 1/4 cup pumpkin seeds or nut/seed of choice
  • 1/2 avocado

Instructions

Shrimp

  • Pre-heat a cast iron skillet until surface is smoking hot. Meanwhile add the shrimp ingredients in a small bowl and mix to combine. Sauté the shrimp for about 3 minutes on each side or until shrimp is no longer pink.

Dressing

  • Add all the ingredients to a blender cup and work it for about 1 minute. Transfer to an air tight covered glass jar and refrigerate remaining dressing for future use.

Salad

  • Add all the ingredients to a large glass bowl. Top it with shrimp. Pour a generous amount of dressing over the salad and toss to combine.
