Shrimp Stew (Moqueca de Camarão)

Ingredients

  • 18-20 lg Shrimp
  • 1 cup coconut milk
  • 1 tbsp coconut oil
  • 1/4 cup coconut palm oil
  • 1 tbsp scallions
  • 1 tbsp cilantro
  • 1 lg red pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • red crushed pepper sprinkled
  • himalaya salt to taste

Instructions

  • In a large cast iron casserole heat the coconut oil until melted.
  • Add the coconut milk, shrimp and palm oil.
  • Let this mixture start to combine into an uniform orange coloured sauce (about 5 minutes)
  • Add the spices and herbs at this time, along with the sliced red pepper.
  • Cook for another 10 minutes, stirring occasionally.
  • Remove from heat and serve over rice or plain pasta.
