Roasted Tomatoes Sauce

Ingredients

  • 16-18 lg tomatoes
  • 1 lg onion
  • 6-8 garlic bulbs
  • 3/4 c olive oil
  • basil
  • italian seasoning
  • oregano
  • salt & pepper

Instructions

  • Wash and cut off a slice from the top of the tomatoes.
  • Arrange the tomatoes on a large baking sheet.
  • Pour all the oil over the tomatoes and add the spices.
  • Cut up the onion and garlic and spread around the baking sheet.
  • They don't need to be cut up small because it will all get blended in at the end.
  • Bake in oven at temperature of 280F for about 2 hours.
  • Remove from oven and let it cool off for 5 minutes
  • Blend all the tomatoes and distribute in jars.
