Roasted Chickpeas

  • 2 cups chickpeas
  • 1/4 cup olive oil
  • 1 tbs garlic powder
  • 2 tbs chopped shallots
  • salt & pepper


  • Soak chickpeas for 6-8 hours in cold water. Rinse thoroughly.
  • Cook in a pressure cooker with 4 cups of water for 25 minutes.
  • Remove from the pressure cooker and place it in a baking sheep over parchment pepper.
  • Pour the olive oil over the garbanzo beans.
  • Add the shallot and garlic powder.
  • Sprinkle with salt & pepper
  • Bake at 400F for 25 minutes stirring twice in between.
