Add all the ingredients except chocolate to a high speed blender (I use Ninja Professional).
Blend well for about 10 minutes, stopping a few times to bring the ingredients together.
Place this mixture in a plate and roll into small balls, on the palm of your hands.
Refrigerate for at least 1/2 hour before coating with chocolate.
Melt the chocolate in the microwave and pour it into a small bowl.
Using two spoons, one on each hand, dip and roll the energy balls into the chocolate.
Place the chocolate dipped energy balls on a tray with parchment paper.
Refrigerate for at least 1 hour before serving. Keep refrigerated
