Heat oil in cast iron skillet or any oven safe skillet. Sauté the chicken until skin is golden brown about six minutes each side.
Top the chicken with fresh mozzarella and tomato slices. Feel free to add extra tomatoes around the skillet.
Bake at 400F degrees for 15 minutes. Top with fresh basil and drizzle with glazed balsamic vinegar.
