- 6 tbsp high quality butter salted or unsalted
- 4 garlic cloves minced or pressed
- 6 tbsp cream cheese
- 3 tbsp parmigiano-reggiano cheese grated
- 1 cup heavy cream
- 1/2 cup milk
- salt and fresh ground pepper to taste
In a medium sauce pan, melt the butter over low heat. Whisk in cream slowly. Add all the remaining ingredients one by one, stirring well in between to prevent the sauce from clumping (see notes)
Cook sauce on gentle heat for about 10 minutes, keeping a close eye on it. Adjust thickness as needed based on notes below.
Option to add pasta water for a glossy finish.
- It is important to simmer Alfredo sauce on gentle low heat. Avoid boiling
- If the sauce is clumpy add warm water or pasta water and bring it back together
- Take your time adding and incorporating the ingredients
- If the sauce separates whisk more cream or pasta water.
- Avoid pre-shredded cheese to prevent weird gritty texture.
