Honey Cantaloupe Jam

This delicious and slightly sweet Honey Cantaloupe Jam makes for a fun and tasty RITZ Cracker topping. A nice way to enjoy the best flavors of the season!

Ingredients

  • RITZ Crackers
  • 1/2 cup ricotta cheese
  • 2 cups cantaloupe chunks
  • 1/4 cup raw honey
  • 1 lemon juiced
  • sea salt
  • fresh dill

Instructions

  • In a small saucepan cook the cantaloupe for 5 mins. Mash lightly with a potato masher and add in the fresh lemon juice, honey and sea salt. Boil, stirring occasionally for 7-8 mins to thicken the jam.
  • Remove from heat and pass the excess liquids through a mesh strainer without pressing down the jam.
  • Let cool completely then transfer to a glass jar.

Assembling The RITZ Crackers Snacks

  • Spread a thin layer of ricotta cheese on a single cracker. Top with honey cantaloupe jam and garnish with fresh dill for a complete and tasty snack.
