Ground Turkey Taco Skillet
A hearty turkey taco skillet made with ground turkey, beans, corn, and spices. An easy, one-pan Mexican-inspired dinner that cooks in 20 minutes!

- 1 lb ground turkey
- 1 can black beans
- 1 can corn
- 14 oz can fire roasted diced tomatoes
- 4 oz can green chiles
- 1 onion diced
- 1 red bell pepper chopped
- 1 tsp paprika
- 1 tsp Mexican oregano
- salt and pepper to taste
- 1 1/2 tbsp olive oil
- fresh cilantro
Start by heating oil in a large skillet or casserole over medium heat.
Add the onion and red bell pepper and sauté until they soften.
Toss in the ground turkey and break it apart with your spoon as it cooks. Ground turkey cooks quickly, all you need is about 5-6 minutes. Season with salt, pepper, paprika and oregano.
Stir in the canned ingredients. That's the fire-roasted tomatoes, black beans, corn, and green chiles. Give it a good stir.
Reduce the heat and simmer covered for 5–10 minutes.
If you’re adding cheese, sprinkle it right on top while the skillet is still warm. Garnish with fresh cilantro, top with avocado, sour cream or your favorite toppings!
Storage & Reheating
To store:
Let the skillet cool completely, then transfer leftovers to an airtight container. Store in the refrigerator for up to 4 days.
To freeze:
Place cooled turkey mixture in a freezer-safe container or bag, flatten to remove air, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
To reheat:

On the stove: Warm in a skillet over medium heat with a splash of water or broth to loosen the sauce. Stir occasionally until heated through.

In the microwave: Heat in 1-minute intervals, stirring between each, until hot.

From frozen: Reheat gently on the stove until warmed through
Pro tip: If you plan to serve it later in the week, cook and store the turkey mix separately, then add fresh toppings (like cheese, avocado, or cilantro) right before serving for that just-made flavor.
