Ingredients and Notes

  • Ground turkey: I like using lean ground turkey for a lighter, protein-packed base. You can swap for ground chicken or even beef if that’s what you have on hand.
  • Black beans: Canned black beans make this recipe quick and easy, but if you prefer homemade, try my Black Beans with Smoked Kielbasa they add an extra layer of rich, smoky flavor.
  • Corn: Fresh, frozen, or canned, whatever’s most convenient. I love the little pops of sweetness it adds.
  • Fire-roasted tomatoes: These give the dish that deep, slightly smoky flavor. Regular diced tomatoes will work too if that’s what you have.
  • Onion: A yellow or white onion adds great flavor depth; cook it until soft and lightly golden for the best results.
  • Red bell pepper: Adds a touch of sweetness and color but feel free to use orange or yellow if you prefer.
  • Green chiles: Mild diced green chiles bring just the right hint of heat without overpowering. Skip them if you want it kid-friendly or substitute with jalapeño for extra spice.
  • Paprika: Adds a warm, earthy tone. Smoked paprika works beautifully here for that subtle charred note.
  • Mexican oregano: More citrusy and less bitter than regular oregano. Use what you have, but if you find Mexican oregano, it’s worth it!
  • Salt and pepper: Always to taste, and adjust at the end once everything has simmered together.
  • Olive oil: For sautéing and bringing all those flavors together; avocado oil is a fine swap too.
  • Cheese (optional): A sprinkle of shredded cheddar, Monterey Jack, or cotija on top adds creaminess and flavor, but it’s totally optional if you want to keep things lighter.

How to make ground turkey taco skillet

  1. Warm up the skillet – Start with a large skillet or casserole, something roomy enough to hold all the good stuff. Drizzle in a little olive oil and warm it over medium heat while you chop the onion and pepper.
  2. Sauté the veggies – Add the onion and red bell pepper to the pan and cook until they soften and start to get a little golden around the edges. This is where the flavor starts to build, so take a minute to let the kitchen smell amazing.
  3. Cook the turkey – Add the ground turkey and break it apart with your spoon as it cooks. Season with salt, pepper, paprika, and Mexican oregano. Stir often until the meat is browned and no longer pink.
  4. Add the flavor layers – Stir in the green chiles, corn, black beans and fire-roasted tomatoes. Everything should look colorful and cozy at this point, like dinner is really happening.
  5. Simmer and blend – Reduce the heat a little and let everything simmer for 5–10 minutes. The flavors will come together beautifully, and the sauce will thicken slightly. Taste and adjust the seasoning if needed.
  6. Finish and serve – If you’re adding cheese, sprinkle it right on top while the skillet is still warm so it melts perfectly. Garnish with fresh cilantro and serve it straight from the pan with warm tortillas, rice, or a dollop of guacamole, whatever fits your weeknight vibe.

This Hearty Turkey Taco Skillet is one of those meals that just keeps giving, a true dinner that stretches so you don’t have to. It’s hearty enough for a full meal, but flexible enough to turn into something new the next day. Here are a few of my favorite ways to serve and reinvent it:

  • Classic taco night: Spoon the turkey mixture into warm yuca tortillas and pile on your favorite toppings; avocado, sour cream, salsa, a sprinkle of cheese, maybe a few jalapeño slices if you like a little heat.
  • Over rice or quinoa: A quick way to turn it into a burrito bowl-style dinner. Add a handful of greens or shredded lettuce for extra freshness.
  • Turkey Stuffed peppers: Use any leftovers to fill halved bell peppers and bake until tender. It’s a whole new meal with zero extra effort.
  • Next-day nachos: Spread tortilla chips on a sheet pan, top with the leftover turkey mix, and bake until crispy and bubbly.
  • With eggs for breakfast: A spoonful of this skillet mix makes the best breakfast scramble or topping for a breakfast taco.

Ground Turkey Taco Skillet

A hearty turkey taco skillet made with ground turkey, beans, corn, and spices. An easy, one-pan Mexican-inspired dinner that cooks in 20 minutes!

Ingredients 

  • 1 lb ground turkey
  • 1 can black beans
  • 1 can corn
  • 14 oz can fire roasted diced tomatoes
  • 4 oz can green chiles
  • 1 onion diced
  • 1 red bell pepper chopped
  • 1 tsp paprika
  • 1 tsp Mexican oregano
  • salt and pepper to taste
  • 1 1/2 tbsp olive oil
  • fresh cilantro

Instructions 

  • Start by heating oil in a large skillet or casserole over medium heat.
  • Add the onion and red bell pepper and sauté until they soften.
  • Toss in the ground turkey and break it apart with your spoon as it cooks. Ground turkey cooks quickly, all you need is about 5-6 minutes. Season with salt, pepper, paprika and oregano.
  • Stir in the canned ingredients. That's the fire-roasted tomatoes, black beans, corn, and green chiles. Give it a good stir.
  • Reduce the heat and simmer covered for 5–10 minutes.
  • If you’re adding cheese, sprinkle it right on top while the skillet is still warm. Garnish with fresh cilantro, top with avocado, sour cream or your favorite toppings!

Storage & Reheating

To store:
Let the skillet cool completely, then transfer leftovers to an airtight container. Store in the refrigerator for up to 4 days.
To freeze:
Place cooled turkey mixture in a freezer-safe container or bag, flatten to remove air, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
To reheat:
  • On the stove: Warm in a skillet over medium heat with a splash of water or broth to loosen the sauce. Stir occasionally until heated through.
  • In the microwave: Heat in 1-minute intervals, stirring between each, until hot.
  • From frozen: Reheat gently on the stove until warmed through
Pro tip: If you plan to serve it later in the week, cook and store the turkey mix separately, then add fresh toppings (like cheese, avocado, or cilantro) right before serving for that just-made flavor.
