Cannellini Sausage Kale Soup

Ingredients

  • 1 can 15oz cannelloni beans
  • 2 cups kale roughly chopped
  • 1 cup carrots sliced
  • 1/2 cup celery sliced
  • 12 oz 4 fully cooked chicken sausage, chunks
  • 5 cups vegetable broth
  • 1 tbsp olive oil
  • 1 small shallot sliced
  • 4 garlic cloves minced
  • 1 tbsp tomato paste
  • 1/2 tsp sea salt
  • 1/2 tsp paprika
  • 1/2 tsp thyme

Instructions

  • Heat oil in a large pot or dutch oven.
  • Add in sliced shallot and sauté until translucent (2 mins).
  • Add minced garlic and sauté until fragrant (2 mins).
  • Add sausage, carrots, celery and spices (salt, paprika, thyme), sauté stirring often for 5 mins.
  • Add broth and tomato paste. Cover and let it simmer for 10 minutes.
  • Add kale and cannellini beans, turn heat down to low, cover and let it simmer for an additional 5-6 mins.
  • Serve hot with a baguette or crackers.
