Cottage Cheese Dragonfruit Protein Popsicles

Creamy, tangy, and rich in protein, these Cottage Cheese Dragon Fruit Protein Popsicles are an ideal treat to beat the summer heat.

Ingredients

  • 1 cup cottage cheese
  • 3.5 oz dragonfruit pulp frozen
  • 1 tbsp maple syrup
  • 1 cup milk
  • 1 scoop vanilla protein powder

Chocolate Pistachio Topping (optional)

  • 1/3 cup chocolate chips
  • 1 tsp coconut oil
  • 2 tbsp pistachios crushed

Instructions

  • Add all the ingredients to a blender cup
  • Pulse it until mixture is creamy and smooth
  • Pour cottage cheese protein smoothie into popsicle mold. Insert popsicle sticks and place it in the freezer for at least 4-6 hours

Chocolate Pistachio Topping (optional)

  • When ready to eat the popsicles, melt chocolate chips and coconut oil in the microwave for 30 seconds at a time until fully melted and creamy. Transfer melted chocolate to a small Ziplock bag. Make a small cut in one of the corners of the Ziplock bag or use a pastry bag with a very small hole to drizzle chocolate over the popsicles.
  • Remove protein popsicles from popsicle mold. Drizzle with chocolate and add crushed pistachios over the melted chocolate. Serve immediately.

Notes

Note: Once you add the chocolate pistachio topping to the popsicles they will no longer fit in the mold. You can then store them in individual popsicle bags (my popsicle mold that is linked above comes with popsicle bags) or store them in a freezer ziplock bag until ready to eat.
