This corn skillet recipe is quick, simple, and ideal for busy weeknights with the whole family. With just one large skillet, ground beef, vegetables, and easy seasonings, you’ll have dinner on the table in under 30 minutes.
Heat the skillet: In a large skillet, heat oil over medium-high heat.Cook the beef: Add ground beef and onion, breaking it apart. Brown for about 5–7 minutes until nearly cooked then add in the green herbs and aromatics.
Season: Stir in salt, pepper, and any other spices such as paprika and cayenne, if using.
Add veggies: Mix in corn and cherry tomatoes. Optional black beans or green chilies, and simmer for 5 minutes.
Serve & garnish: Remove from heat and top with chopped green onion, fresh cilantro, and grated pepper jack.
Optional casserole twist: Transfer to a casserole dish, top with cheese, bake until melty, and serve like a cornbread casserole.
