- 1 loaf brioche bread about 16oz, cubed
- 8 eggs
- 2 cups milk
- 2 tsp vanilla extract
- 1 cup caramel sauce divided
- 2 cups apples (Granny Smith and Honeycrisp) chopped small
- 1 zest of lemon
- powdered sugar for dusting
Preheat the oven to 350°F and lightly grease a baking dish.
Arrange the cubed brioche evenly in the dish.
Whisk the eggs, milk, vanilla, and 1/2 cup caramel sauce until smooth.
Toss the apples with the lemon zest and scatter them over and between the bread.
Pour the custard evenly over the bread and press gently so all the pieces are coated.
Let rest 15 to 20 minutes. For an overnight version, cover and refrigerate, then bake the next morning.
Bake uncovered for 40 to 45 minutes, until golden and set in the center.
Rest 10 minutes, then drizzle with the remaining 1/2 cup caramel and dust with powdered sugar if desired.
Notes
- Use day-old brioche for the best texture.
- The center should look set, not wet, when it’s done.
- Resting before topping makes it easier to slice.
💛 Silvia’s Tip: Reheat leftovers in the oven so the edges crisp up again while the center stays soft and custardy.
