Soft, custardy brioche soaked in a caramel vanilla custard, topped with tart and sweet apples and a little lemon zest, then finished with a warm drizzle of caramel. This caramel apple French toast casserole tastes like a fall caramel apple and takes just one bowl and no stovetop.

caramel apple French toast casserole

There’s something about a baked French toast casserole that makes a fall morning feel like a special occasion, especially when caramel and apples are involved.

This caramel apple French toast casserole is my cozy, autumn take on my Lemon Blueberry French Toast Casserole. Rich brioche soaks up a custard made with caramel sauce, so the sweetness is baked into every bite, not just poured on top. A mix of Granny Smith and Honeycrisp apples adds juicy pops of tart and sweet, and a little lemon zest keeps it bright instead of heavy.

I love making this for Thanksgiving weekend and Christmas morning, but it’s just as perfect for a slow Saturday at home. You can assemble it the night before and bake it in the morning, no stress, no fuss.

If you’re looking for a French toast casserole that tastes like fall in a baking dish, this is the one to save.

Author’s Note

I’ve been making this caramel apple French toast casserole since my kids were little, and it’s still the breakfast everyone asks for, kids and grown-ups alike. Every fall, after we go apple picking here in New England, those fresh, crisp apples go straight into this make-ahead breakfast casserole, and it always feels a little extra special. It’s become our family’s go-to fall brunch, from lazy Saturday mornings to Thanksgiving weekend and Christmas morning.

If you love a cozy baked French toast as much as we do, try my Lemon Blueberry French Toast Casserole in the spring, or my Churros French Toast Bites and Tres Leches French Toast when you’re craving something a little different. And if you came home from the orchard with a bag full of apples like I always do, my Pork Tenderloin with Roasted Apples and Butternut Squash Apple Soup are delicious ways to use them up.

Enjoy!

  • No stovetop step: the apples go in raw and soften as it bakes
  • Granny Smith and Honeycrisp give the perfect balance of tart and sweet
  • Lemon zest brightens the caramel so it never tastes too heavy

Ingredients For Caramel Apple French Toast Casserole

  • Brioche bread – Rich and buttery, it soaks up the custard and bakes up soft and golden. Day-old brioche works best.
  • Eggs – Give the custard structure so it sets and slices cleanly.
  • Milk – Whole milk makes the creamiest custard.
  • Vanilla extract – Adds warmth that pairs perfectly with caramel.
  • Caramel sauce – Half goes into the custard and half goes on top after baking. Store-bought or homemade both work.
  • Apples – A mix of Granny Smith for tartness and Honeycrisp for sweetness. Both hold their shape when baked.
  • Lemon zest – Brightens the apples and keeps them from tasting flat.
  • Powdered sugar – Optional, for a snowy finish.

How To Make Caramel Apple French Toast Casserole

➜ Full measurements and instructions are in the recipe card below.

  1. Cube the brioche. Aim for roughly 1-inch pieces so every bite gets soft in the center and golden on the edges.
  2. Whisk the caramel custard. Whisk until no streaks of caramel or egg remain. If your caramel is thick from the fridge, warm it for a few seconds first so it blends smoothly.
  3. Add the lemony apples. Tossing the apples with lemon zest keeps them bright and keeps the caramel from tasting too sweet. Tuck some between the bread cubes, not just on top, so there’s apple in every slice.
  4. Pour and press. Pour the custard slowly over the bread, then press down with a spatula until every cube looks soaked. Any dry bread on top will stay dry after baking.
  5. Bake until set. It’s done when the top is golden and the center no longer jiggles when you gently shake the dish. If you press the center, no liquid custard should come up.
  6. Rest, then top. Resting lets the custard finish setting, so it slices cleanly. Add the caramel drizzle and powdered sugar right before serving so they stay glossy.

Make It Overnight

This is where this recipe really shines. To make it the night before:

  • Assemble everything the night before
  • Cover and refrigerate overnight
  • Let it sit on the counter while the oven heats, then bake fresh in the morning

The longer soak lets the brioche absorb all of that caramel custard, giving you a soft, bread-pudding-like texture throughout.

What To Serve With It

This casserole is on the sweet side, so it pairs best with something savory:

  • Crispy bacon or breakfast sausage
  • Scrambled or fried eggs
  • A simple fruit salad or Greek yogurt
  • Hot coffee or apple cider

Silvia’s tips

➜ Chop the apples small (about 1/2 inch) so they soften fully as they bake

➜ Use day-old brioche. Alternatively use sourdough bread for a rustic casserole

➜ Warm the caramel slightly before whisking it in so it blends smoothly

➜ For a crispier top, bake uncovered the whole time

➜ Let it rest 10 minutes before topping and slicing so it sets

Frequently Asked Questions

Can I use a different bread?
Yes. Challah, soft sourdough, or a thick French loaf all work. Brioche gives the richest, most custardy result.

What are the best apples for French toast casserole?
A mix of tart and sweet. Granny Smith and Honeycrisp are my favorite pair, but Pink Lady and Braeburn also hold their shape well.

Why is my French toast casserole soggy?
Usually the bread was too fresh or it needed more time in the oven. Use day-old bread and bake until the center no longer looks wet.

Can I double this recipe?
Yes. In one larger dish, start with the original bake time and add 10 to 15 minutes, checking until the center is set. If the top browns too quickly, loosely cover it with foil.

Storage and Reheating

Fridge: Store leftovers covered for up to 3 to 4 days.

Reheat: Warm slices in the oven at 350°F for 10 to 15 minutes so the edges crisp up again. The microwave works too, for 45 to 60 seconds.

Add the topping fresh: For the best texture, add extra caramel and powdered sugar after reheating.
