This blueberry beet protein smoothie features frozen blueberries, plant based milk and yogurt as well as cooked beets and protein powder. Fairly simple everyday ingredients but what you get is a vibrant looking, anti-oxidant packed smoothie to start your day.

If you’ve never added beets to your smoothies before you’ll be pleasantly surprised at how vibrant and earthy they make them taste. Beets are loaded with nutrients like fiber, folate, potassium and Vitamin C. Beets are also a great source of antioxidants which may help support a healthy immune system.

To use beets in a smoothie you’ll need to steam them, boil them or pick up a package of precooked beets at the grocery store.

Though most people think of smoothies as breakfast food they are also ideal for a post-workout meal, mid-day snack or whenever you need an energy boost.

Ingredients

  • Blueberries: Blueberries add loads of antioxidants to this smoothie and help give it a rich dark color. This smoothie takes frozen blueberries but you can use fresh and add a few ice cubes if you wish.
  • Hemp milk: Use unsweetened hemp milk or your favorite plant-based milk.
  • Plain yogurt: Use plain plant-based yogurt. For a richer smoothie, use a Greek-style yogurt.
  • Beets: Cooked beets help give this smoothie its vibrant color as well as increase its nutritional value.
  • Vanilla protein powder: Use your favorite protein powder or use berry protein powder. If you want to keep this smoothie plant based use a plant-based protein powder with pea, brown rice, hemp or soy protein. If you aren’t fussed about a plant-based protein then any protein powder will work.

How To Make This Berry Protein Smoothie

Place all the the ingredients in the blender and blend until creamy and smooth. You can also use an immersion blender to make the smoothie if that’s all you’ve got on hand.

Sprinkle the top with hemp hearts and serve cold.

RECIPE TIP

When adding the ingredients to the blender, place liquid in first or an ingredient that will blend easily. This will make it easier for all the ingredients to be incorporated.

if using fresh beets, should they be peeled beforehand?

This is a matter of choice, if your beets are clean and you don’t mind eating them unpeeled then don’t peel them.

do i need a high speed blender to make this smoothie?

No high speed blender is required though it does make preparing a smoothie easier.

can i use plain protein powder?

Yes, if you only have plain protein powder you can still use it but think about adding a teaspoon of vanilla extract to the smoothie.

can i use raw beets to make this smoothie?

If you have a high speed blender raw beets should be okay but if you don’t have a high speed blender the raw beets may not break down enough.

would canned beets work in this recipe?

Canned beets should work as they are cooked, just drain them before adding them to the blender.

Storage

This blueberry protein smoothie tastes best when eaten right away but if you can’t finish it you can place it in the fridge in an airtight container or mason jar for up to 2 days. When you want to finish it, place it in the blender again with a few ice cubes to thicken it up.

Alternatively, store it in the freezer and then thaw on the kitchen counter until it’s drinkable.

  • 2 cups blueberry frozen
  • 1 cup hemp milk
  • 1 cup plain yogurt plant based
  • 1/2 cup beets
  • 1 scoop vanilla protein powder sub for berry protein powder

Instructions 

  • Add all the ingredients to a blender cup and process for 1-2 minutes or until creamy and smooth.
  • Option to top with hemp hearts seeds and serve cold.
