Choosing one dessert amongst our many favorites can be tortuous, but luckily with this recipe you don’t have to. Meet the BROWNIE S’MORES CUPCAKE! Fudge brownie cupcake topped with perfectly roasted marshmallow and a melting chocolate square!

Whoooaaa, right?! My kids will love me forever (they even said it!). Next day after I made these yummy-licious s’mores brownies, I had a house full of teens asking if I had any left for them to try. Those instagramers are hard to hide from, lol. So I made a another batch, and another batch, and the rest is history 🙂

Step 1. fudge brownie for easy Brownie S’mores

I totally got lazy on this one and went for the boxed stuff. First of all there are a lot of great brownie mixes out there (I used Whole Foods brand 365 brownie mix). Second, it’s summer time and I honestly don’t want to spend that much time in the kitchen. Lastly and most important, I really wanted this Brownie S’mores Cupcake recipe to be easy enough that EVERYONE can do it. I have teens, and the idea is for them to be able to whip up a batch when their friends come over.

Follow the instructions on the brownie box. Cook for a few minutes shorter than recommended times. Remove from oven and follow next step instructions.

Step 2. marshmallows for Brownie S’mores

Immediately switch oven to broil. Place a large marshmallow on top of each brownie and return to oven. Broil for up to 2 minutes or until the Brownie S’mores are perfectly roasted.

Remove from oven and rest on a cooling tray.

Step 3. chocolate for S’mores Brownies

Last step is to put your chocolate squares on top of the perfectly roasted marshmallows and press down gently. You can use any chocolate you like, milk, dark, with filling, nuts… whatever!

Let the Brownie S’mores rest for 3-5 minutes and serve while warm.

Brownie S’mores Cupcake

Brownie S’mores Cupcake is a triple layer dessert that is perfect to eat warm out of the oven. Fudge brownie cupcake with perfectly roasted marshmallow and topped with a chocolate square!

Cook: 18 minutes
Servings: 12 cupcakes

Equipment

  • Muffin Pan

Ingredients 

  • 1 box brownie mix
  • 12 large marshmallows
  • 12 squares chocolate

Instructions 

  • Bake brownie according to box instructions. Instead of using on a flat pan, scoop about 3/4 brownie mix into a cupcake liner and bake for a shorter time than instructions recommend.
  • When done remove from oven, switch oven temperature to broil. Place one large marshmallow on top of each brownie cupacake and return to oven. Bake for up to 2 minutes or until marshmallows are perfectly roasted.
  • Remove from oven and place on a cooling rack. Top each brownie s'mores cupcake with a chocolate square. Allow it to rest for 3-5 minutes. Serve warm.
