I woke up to the realization that in just over a month school will be out for the summer! If I could only pour all my feelings (about school vacation) into a blender and get a sweet muffin out of it, life would be perfect!
Don’t take me wrong, there are pleeeeenty of good things with kids being out of school, but I can see the scale is leaning heavy towards the other end… cuz I kind work from home. Thank goodness they sleep in, and chances are there will be plenty of phone action going on. Fingers crossed that everything-will-be-okay!!!
But, I will say this -You CAN get sweet muffins out of a blender and they taste insanely good too!

Besides, the blender does a much better arm-work without the usual mess that comes with baking. Right?! Plus I am strictly saving my arms for garden work these days 🙂
Making blender muffins is a business that literally took-off for me because of the level of easiness, convenience and time that goes into it. These days I can simply pull-out my Vitamix (any high power blender will work just fine!), add in my base which a lot of times is oatmeal, a piece of fruit and/or vegetable, sweetener, liquids and 20-25 minutes later we have fresh muffins!

Healthy Strawberry Banana Oatmeal Muffins
Ingredients
- 1 cup old-fashioned oatmeal
- 1 banana
- 1/4 cup maple syrup
- 5 oz plain or strawberry yogurt or apple sauce
- 1/2 cup strawberries
Instructions
- Pre-heat oven to 350F degrees. Spray a muffin pan with cooking spray and set aside.
- Add all the ingredients to the blender cup and work it for about 1 minute* on low going up to low-medium speed. Stop right away when the ingredients are fully combined. The goal is to keep the shape of the oats as much as possible.
- Pour batter into a muffin pan, no muffin liners needed! Bake for 17-18 minutes or until toothpick come out clean.
- Top with fresh berries, confectioning sugar and serve.
- Keep remaining muffins refrigerated for up to 3 days.

My 2 year old loved these!! Perfect for using up the super ripe strawberries I had. I also brought them to a birth class to share and the other parents to be loved them as well. Nice and easy and comforting. I doubled the recipe and made smallish/med sized muffins in a regular muffin pan. I ran out of time and forgot to put corn starch on the strawberries but they came out yummy and jammy but baked through and not soggy. It was denser and not fluffy like a regular muffin but i enjoyed the texture and all the healthy fruit in it. Thx for the recipe!
