There are three types of people I know; the ones that can bake. They’ll whip up a few things together and voila!… something amazing will appear.  The ones that think they can’t bake. Usually you hear them grumble things like – oh, I wish I could bake or baking is so hard! And finally the ones that don’t care who’s baking, they just want to eat it hahaha 🙂 For all the folks who nodded their heads saying –that’s me! This recipe is for you!

Why you ask ? 

This recipe is so easy to make, no one is required to be gifted with special baking skills. Additionally, a nice little thing I must add, there is no mess to clean up.  No bowls, spatulas or dusty counters… in fact you won’t be using flour at all in this recipe!

Just thinking back when I made our favorite Morning Glory Healthy Muffins, they were so fluffy and delicious, certainly worth the effort to clean up. But these… I don’t know about you but I definitely enjoyed the no-mess baking.

These scrumptious Cinnamon Apple Muffins are made entirely in a blender, using few healthy ingredients that you most likely have in your pantry. It’s a tasty low-calorie muffin packed with fruits, fiber and lots of oats for a perfect little somethin’ that you and your family can grab and eat all-day-long.

I love having a wholesome muffins to give to the kids before school. It’s a quick, easy and tasty breakfast option for those super-early school mornings. What better way to gain the strength and energy to carry you through a busy morning schedule than with an oatmeal based breakfast. I also pack in their school lunches for a healthy and filling snack.

Did I mention my Cinnamon Apple Muffins are also gluten-free, contain no refined sugar or oils? By substituting for healthier ingredients, such as agave (or honey) and apple sauce, we bring down the calorie amount to a fraction! Think of it as your traditional-ly delicious morning muffin, without the downside of guilt.

Easy Cinnamon Apple Blender Muffin

Easy Cinnamon Apple Blender Muffin; this no-mess healthy muffin is gluten-free and contain no refined sugar, oil or flour. Simply a delicious and healthy muffin for your everyday breakfast.
Prep: 5 minutes
Cook: 20 minutes
Total: 25 minutes
Servings: 8 large muffins

Ingredients 

  • 2 cups rolled oats
  • 1 apple peeled, sliced (I used honeycrisp)
  • 1 ripe banana
  • 2 eggs
  • 1/2 cup apple sauce
  • 1/3 cup agave or honey
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 1/2 tsp vanilla extract

Instructions 

  • Preheat oven to 400F degrees.
  • Add all the ingredients to your blender and pulse for about 1 minute or until well combined (this may vary depending on the machine you are using. I used a Vitamix which took about 50 seconds)
  • Pour the batter into the muffin cups. If you don't have paper muffin cups similar to the ones I used, you can use a muffin pan. It's your choice.
  • Sprinkle with oats and sparkling sugar for a crunchy bite and bake for 20 minutes or until toothpick comes out clean*

Notes

*Baking time may vary depending on the side of your muffins. My muffins are fairly large in size. Regular size muffins should take about 15 minutes to bake. Keep checking often as oven temperatures may vary.
