- 2 cups rolled oats
- 1 apple peeled, sliced (I used honeycrisp)
- 1 ripe banana
- 2 eggs
- 1/2 cup apple sauce
- 1/3 cup agave or honey
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 1/2 tsp vanilla extract
Instructions
- Preheat oven to 400F degrees.
- Add all the ingredients to your blender and pulse for about 1 minute or until well combined (this may vary depending on the machine you are using. I used a Vitamix which took about 50 seconds)
- Pour the batter into the muffin cups. If you don’t have paper muffin cups similar to the ones I used, you can use a muffin pan. It’s your choice.
- Sprinkle with oats and sparkling sugar for a crunchy bite and bake for 20 minutes or until toothpick comes out clean*
